The easiest thing may be to simply setup a new Account and adjust its Starting Balance, periodically. Get started by going up to click the Account menu at the top of the screen and select the New Account menu option. To change the Starting Balance, later, select the Account, go to the Account menu, and select the Edit Account menu option.
Supposing you want to track balance changes, you'd need to do a little math each month and use entries, instead of adjusting the Starting Balance. Simply take the real world ending Balance you want to match, each time, subtract the CheckBook Account's Balance, and then input an entry in the resulting amount—if the amount's a negative, use a Debit, otherwise, use a Deposit.
