My initial idea was Tao, which is short for Transcoder And Optimizer, and in Chinese means "The Way." The problem is that I found another program on versiontracker already using the name. So I expanded it to Toaism: Transcoder And Optimizer for iPod Screen Metrics.

I also think Pocket Rocket might work.

Vodner is a good one. I like that.

I think that VideoWrangler would be great, but the folks at barebones.com may not agree. I'll keep racking the brain though. It would be great to keep the whole Western theme going. Maybe VidHerder or VideoHerder?
